Chicken Biryani is the ultimate comfort food for any occasion! This recipe blends bold spices like garam masala, cumin, and saffron with juicy marinated chicken and caramelized onions for rich flavor in every bite.
Ingredients
- 2 cups basmati rice soaked for 30 minutes
- 1 lb 500g chicken, cut into pieces
- 2 onions thinly sliced
- 2 tomatoes chopped
- 1 cup plain yogurt
- 2 tbsp ginger-garlic paste
- 1 tsp red chili powder
- 1 tsp turmeric powder
- 1 tsp garam masala
- 4 cloves 2 cardamom pods, 1 cinnamon stick
- 1/4 cup fresh cilantro chopped
- 1/4 cup fresh mint chopped
- 4 tbsp vegetable oil
- Salt to taste
- 2 cups water
Instructions
- Heat oil in a large pot and fry onions until golden brown. Remove half for garnish.
- Add ginger-garlic paste, chicken, and spices (chili, turmeric, garam masala). Cook for 5 minutes.
- Stir in tomatoes, yogurt, and salt. Cook until chicken is tender (15–20 minutes).
- In a separate pot, boil soaked rice with cloves, cardamom, cinnamon, and salt until 70% cooked. Drain.
- Layer half the rice over the chicken mixture. Sprinkle cilantro, mint, and fried onions. Add the remaining rice.
- Drizzle saffron milk (if using) on top. Cover and cook on low heat for 20 minutes (dum style).
- Fluff and serve hot with raita or salad.
