Ingredients
  

  • 2 cups basmati rice soaked for 30 minutes
  • 1 lb 500g chicken, cut into pieces
  • 2 onions thinly sliced
  • 2 tomatoes chopped
  • 1 cup plain yogurt
  • 2 tbsp ginger-garlic paste
  • 1 tsp red chili powder
  • 1 tsp turmeric powder
  • 1 tsp garam masala
  • 4 cloves 2 cardamom pods, 1 cinnamon stick
  • 1/4 cup fresh cilantro chopped
  • 1/4 cup fresh mint chopped
  • 4 tbsp vegetable oil
  • Salt to taste
  • 2 cups water

Instructions
 

  • Heat oil in a large pot and fry onions until golden brown. Remove half for garnish.
  • Add ginger-garlic paste, chicken, and spices (chili, turmeric, garam masala). Cook for 5 minutes.
  • Stir in tomatoes, yogurt, and salt. Cook until chicken is tender (15–20 minutes).
  • In a separate pot, boil soaked rice with cloves, cardamom, cinnamon, and salt until 70% cooked. Drain.
  • Layer half the rice over the chicken mixture. Sprinkle cilantro, mint, and fried onions. Add the remaining rice.
  • Drizzle saffron milk (if using) on top. Cover and cook on low heat for 20 minutes (dum style).
  • Fluff and serve hot with raita or salad.
